Steak Salad (Serves 2-4)
Ingredients
1 pound Svante’s grass fed sirloin steak
1/3 cup soy sauce
6 tablespoons olive oil
1 teaspoon of grated, fresh ginger
1 teaspoon of minced garlic
1 small head of romaine, chopped
1/4 small red onion, sliced
1 avocado, sliced
1/2 cup cilantro
3 tablespoons lime juice
½ teaspoon of kosher salt and ½ teaspoon of pepper.
1 cup of peanuts
Mix the soy sauce, 3 tablespoons of olive oil, ginger and garlic and marinate the steak for at least 30 minutes or preferably all day. Take the meat out of the refrigerator ½ hour before cooking to bring to room temperature which will make the meat tenderer. Put 1 tablespoon of olive oil in a frying pan and turn on low-medium heat. Cook steak on stove top, 3-4 minutes each side for medium rare. Take the steak off and let sit for 10-15 minutes while you make the salad.
Chop the romaine lettuce and put on platter or in salad bowl. Chop red onion and sprinkle on top of the lettuce. Slice the avocado and put on top of lettuce. Combine the remaining 2 tablespoons of olive oil, lime juice, cilantro, salt and pepper. Slice the steak in thin slices and put on top of lettuce mix. Pour olive oil mix evenly on top. Sprinkle peanuts on top. Optional to mix it all up.
